Hot water extraction is the industry standard. It's not enough.
The functional mushroom industry runs almost entirely on hot water extraction. It's not a bad process — beta-glucans are real, well-studied compounds, and hot water pulls them effectively.
But mushrooms contain hundreds of bioactive compounds: terpenoids, ergosterols, lectins, enzymes, and others we're still cataloguing. A standard hot water extract captures maybe 20–30% of that complexity. Everything else gets left behind.
We think that's worth fixing.
